A wholesome, hearty baked oat dish combining rolled oats, Mediterranean vegetables, herbs, and a touch of cheese or yogurt. Perfect as a healthy breakfast, brunch, or light dinner, this dish is savory, satisfying, and naturally nutrient-rich, with fiber, protein, and vitamins in every bite.

Ingredients:

Base:

1 cup rolled oats

1 1/2 cups milk or plant-based milk

1/2 cup Greek yogurt

2 eggs (or flax eggs for vegan option)

1 tsp olive oil

Salt & pepper to taste

Veggies & Mix-ins:

1 small zucchini, diced

1/2 red bell pepper, diced

1 small carrot, grated

1/2 cup cherry tomatoes, halved

1/4 cup chopped olives (green or black)

2 tbsp fresh parsley, chopped

1 tsp dried oregano

Optional: 1/4 cup crumbled feta or soft goat cheese

Instructions:

1. Preheat Oven:

Preheat oven to 180°C (350°F). Grease a small baking dish or loaf pan lightly with olive oil.

2. Prepare Oat Mixture:

In a large bowl, mix oats, milk, yogurt, eggs, olive oil, salt, and pepper. Stir until well combined.

3. Add Veggies & Herbs:

Fold in zucchini, bell pepper, carrot, cherry tomatoes, olives, parsley, oregano, and cheese (if using).

4. Bake:

Pour mixture into prepared dish, spread evenly.

Bake 30–35 minutes until the top is lightly golden and the center is set.

5. Serve:

Let cool for 5 minutes before slicing. Serve warm as a main, brunch, or snack. Drizzle with extra yogurt or olive oil if desired.

Tips & Notes:

Can add roasted garlic or sautéed onion for extra flavor.

Swap vegetables seasonally — spinach, eggplant, or roasted red pepper work beautifully.

For a sweeter touch, you can add a small amount of dried figs or dates for contrast, keeping it Mediterranean-inspired.
