Mediterranean Smoky Paprika Chicken with Mushrooms & Peppers

Tender chicken seared in olive oil, cooked with sweet peppers, mushrooms, garlic, herbs, and a deep smoky paprika tomato sauce. Warm, comforting, and filled with Mediterranean aromas.

Ingredients 

Chicken

500–600 g boneless chicken breast or thighs, cut into strips

1½ tsp smoked paprika (non-spicy, just smoky)

½ tsp oregano

½ tsp garlic powder (or 1 fresh garlic clove)

Salt & pepper to taste

1–2 tbsp olive oil

Vegetables

1 cup mushrooms, sliced

1 red bell pepper, sliced

1 yellow or green pepper, sliced

1 small onion, sliced

2–3 garlic cloves, minced

Sauce

½ cup tomato puree or passata

¼ cup chicken broth or water

1 tbsp olive oil

½ tsp smoked paprika (extra for flavor)

¼ tsp dried thyme or basil

Pinch of salt & pepper

Optional: 1–2 tbsp cream (for a creamy smoky sauce)

Garnish

Fresh parsley

Squeeze of lemon

Drizzle of olive oil

🍽 Instructions

1. Season the Chicken

Mix chicken with:

  • smoked paprika
  • oregano
  • garlic powder
  • salt & pepper
  • olive oil

Set aside 5–10 minutes.

2. Sear the Chicken

1. Heat a large pan with olive oil.

2. Add chicken and cook until lightly golden (about 5–6 minutes).

3. Remove and set aside (it will finish cooking later).

3. Cook the Vegetables

In the same pan:

1. Add onion → sauté 2 minutes.

2. Add mushrooms → cook until browned.

3. Add bell peppers → sauté until slightly soft.

4. Add garlic → cook 30 seconds.

4. Make the Smoky Mediterranean Sauce

Add to the pan:

  • tomato puree
  • broth/water
  • smoked paprika
  • thyme
  • salt & pepper
  • (optional) splash of cream

Mix well and simmer 2–3 minutes.

5. Combine Everything

Add the seared chicken back into the sauce.

Cook 6–8 minutes until chicken is tender and sauce thickens.

Taste and adjust salt or paprika.

6. Finish

Turn off heat and add:

a squeeze of lemon

freshly chopped parsley

drizzle of olive oil
