2 medium zucchinis, grated and squeezed dry
1 cup snow peas, finely chopped
1 small onion, finely chopped
2 garlic cloves, minced

Step 1: Prepare the Cutlet Mixture
1. Grate the zucchini and squeeze all water out using a cloth or hands.
2. Add chopped snow peas, onion, garlic, egg, breadcrumbs, herbs, salt, and pepper.
3. Mix until the batter holds shape. If too wet → add more breadcrumbs.
Step 2: Form & Cook the Cutlets
1. Heat 2–3 tbsp olive oil in a pan over medium heat.
2. Scoop the mixture and gently flatten into patties.
3. Cook 3–4 minutes per side until golden and crisp.
4. Transfer to a paper towel.
Step 3: Roast the Veggies
1. Mix all vegetables in a bowl with olive oil, oregano, basil, salt, and pepper.
2. Spread on a baking tray.
3. Roast at 200°C (400°F) for 20–22 minutes until soft and slightly caramelized.
4. Squeeze lemon on top.
