Mediterranean Stuffed Chicken with Spinach, Feta & Sun-Dried Tomatoes

🥦 Ingredients
For the stuffed chicken:
4 chicken breasts, thinly sliced open
1 cup fresh spinach, chopped
½ cup feta cheese, crumbled
¼ cup sun-dried tomatoes, chopped
2 tbsp fresh basil, chopped
2 garlic cloves, minced
½ tsp dried oregano
Salt & pepper to taste
1 tbsp olive oil (for searing)
For the lemon-herb sauce:
2 tbsp olive oil
Juice of 1 lemon
1 tsp Dijon mustard
1 garlic clove, minced
½ tsp dried oregano
1 tbsp fresh parsley, chopped
🍽 Instructions
1. Prepare the stuffing
In a bowl, mix:
Spinach + feta + sun-dried tomatoes + basil + garlic + oregano + pepper.
2. Stuff the chicken
Slice each breast open (like a book).
Season inside lightly with salt & pepper.
Fill with 2–3 tbsp of stuffing.
Roll and secure with toothpicks.
3. Sear + bake
Heat 1 tbsp olive oil in a pan.
Sear the chicken rolls on all sides until lightly golden.
Transfer to oven and bake at 400°F (200°C) for 18–20 minutes.
4. Make the lemon-herb sauce
Whisk together: olive oil + lemon + Dijon + garlic + oregano + parsley.
5. Serve
Slice the stuffed chicken into rounds.
Drizzle the lemon-herb sauce on top.
Serve with:
- roasted Brussels sprouts, or
- couscous, or
- a small Greek salad.
