Pasta with Halloumi Recipe
Time: 25-30 minutes Serves: 2-3
Ingredients:
200–250g pasta (penne, fusilli, or spaghetti work well)
200g halloumi, cut into cubes or slices
2 tbsp olive oil
2–3 garlic cloves, minced
1 small onion, finely chopped
1 can (400g) chopped tomatoes or 3–4 fresh ripe tomatoes, chopped
1 tbsp tomato paste (optional, for richness)
½ tsp chili flakes (optional, for heat)
1 tsp dried oregano or Italian herbs
Salt & pepper, to taste
Fresh basil or parsley, chopped (optional)
Grated lemon zest or a squeeze of lemon juice (optional for brightness)
Instructions:
Cook the Pasta
Boil pasta in salted water according to package instructions. Drain and set aside, reserving a cup of the pasta water.
Fry the Halloumi
While the pasta cooks, heat 1 tbsp of olive oil in a non-stick pan. Fry the halloumi cubes/slices over medium-high heat until golden on all sides (about 2-3 minutes per side). Remove and set aside.
Make the Sauce
In the same pan, add another tbsp of olive oil. Sauté the onion until soft (3–5 minutes), then add garlic and chili flakes. Cook for another 30 seconds.
Add Tomatoes & Seasoning
Pour in chopped tomatoes and tomato paste. Stir in oregano or Italian herbs. Let simmer for 8–10 minutes, until slightly thickened. Season with salt and pepper to taste.
Combine Everything
Add cooked pasta and halloumi to the sauce. Toss everything together, adding a bit of reserved pasta water if it feels too dry.
Finish & Serve
Top with chopped fresh herbs and a bit of lemon zest or juice for brightness if desired. Serve hot!
