Philly Cheesesteak Smash Burger Tacos
Ingredients:
For the Smash Burgers:
1 lb ground beef (80% lean)
Salt and pepper, to taste
4 small flour tortillas (soft taco size)
4 slices provolone cheese
1 tbsp olive oil (for searing)
For the Philly Cheesesteak Toppings:
1 tbsp olive oil
1 medium onion, thinly sliced
1 bell pepper, thinly sliced (optional)
1/2 lb thinly sliced ribeye steak or beef of your choice
Salt and pepper, to taste
For the Sauce:
1/4 cup mayonnaise
2 tbsp Dijon mustard
1 tbsp hot sauce (optional)
1 tbsp lemon juice
Garnishes (optional):
Pickled jalapeños or banana peppers
Fresh parsley or cilantro, chopped
Extra provolone slices or shredded cheese
Instructions:
Prepare the Sauce:
In a small bowl, mix together the mayonnaise, Dijon mustard, hot sauce, and lemon juice. Set aside.
Cook the Philly Cheesesteak Toppings:
In a large skillet, heat 1 tbsp of olive oil over medium-high heat. Add the sliced onions (and bell pepper, if using) and cook until softened and slightly caramelized, about 5-7 minutes.
Add the thinly sliced ribeye steak (or your preferred beef) to the pan, season with salt and pepper, and cook for 3-4 minutes until browned. Remove from heat and set aside.
Make the Smash Burgers:
Preheat a large skillet or griddle over medium-high heat. Add olive oil to the pan.
While the pan heats up, form the ground beef into 4 loosely packed balls (about 4 oz each). Once the pan is hot, place the balls of beef on the skillet, then smash them down with a spatula to form thin patties. Season with salt and pepper.
Cook for about 2-3 minutes on the first side, then flip the burgers, place a slice of provolone cheese on each patty, and cook for another 2-3 minutes until the cheese is melted and the burger is cooked through.
Assemble the Tacos:
Warm the flour tortillas in a dry skillet or microwave.
Spread a generous amount of the sauce on each tortilla.
Place a smashed burger patty on top of each tortilla.
Add a portion of the Philly cheesesteak mixture (onions and beef) on top of the burger.
Optionally, add pickled jalapeños, extra cheese, or fresh herbs.
