Ingredients

Filling

2 cups shredded chicken (or roasted vegetables for vegetarian)

1 cup spinach or kale, chopped

½ cup corn kernels

½ cup black beans

1 small onion, sauteed

1 tsp olive oil

Salt & pepper

Green Sauce

1 cup tomatillos, husked and boiled

1 small green chili or jalapeno

2 garlic cloves

2 tbsp olive oil

¼ cup fresh cilantro

Salt to taste

Creamy Ranch Topping

½ cup Greek yogurt (or cashew cream for vegan)

1 tbsp olive oil

½ tsp garlic powder

½ tsp onion powder

1 tbsp fresh parsley, chopped

Salt & pepper

For Assembly

6–8 corn or flour tortillas

½ cup crumbled feta or shredded cheese

Fresh cilantro for garnish

 Instructions

Make Green Sauce

Blend boiled tomatillos, green chili, garlic, olive oil, cilantro, and salt until smooth.

Set aside.

Prepare Filling

Heat olive oil in a pan, sauté onion until translucent.

Add chicken (or roasted veggies), spinach/kale, corn, and beans.

Season with salt & pepper.

Make Ranch Topping

Mix Greek yogurt (or cashew cream), olive oil, garlic & onion powder, parsley, salt, and pepper until creamy.

Assemble Enchiladas

Preheat oven to 180°C.

Fill each tortilla with 2–3 tbsp filling. Roll tightly and place in a baking dish.

Pour green sauce over the enchiladas.

Drizzle ranch topping on top.

Sprinkle feta or shredded cheese if desired.

Bake

Bake 15–20 minutes until sauce bubbles and edges are slightly golden.

Garnish with fresh cilantro before serving.
