Ingredients

For the Roasted Beets

3 medium beets, peeled & cut into wedges

1 tbsp olive oil

½ tsp cumin

½ tsp paprika

Salt & black pepper, to taste

For the Chickpeas

1 can (15 oz / 400 g) chickpeas, rinsed & drained

1 tbsp olive oil

½ tsp garlic powder

½ tsp smoked paprika

Salt, to taste

For the Tahini Lemon Sauce

¼ cup tahini

2 tbsp lemon juice

1 tbsp olive oil

1 garlic clove, minced

2–3 tbsp warm water

Salt, to taste

For Assembly

4 large wraps, flatbreads, or pita

2 cups fresh greens (spinach, arugula, or mixed lettuce)

½ small red onion, thinly sliced

Fresh parsley or mint leaves, chopped

Instructions

Step 1: Roast the Beets

Preheat oven to 400°F (200°C).

Toss beet wedges with olive oil, cumin, paprika, salt, and pepper.

Roast on a baking sheet 25–30 minutes until tender.

Step 2: Roast or Saute Chickpeas

Toss chickpeas with olive oil, garlic powder, paprika, and salt.

Spread on a baking sheet and roast alongside beets for 20–25 minutes, OR saute in a skillet until lightly crispy.

Step 3: Make Tahini Lemon Sauce

In a bowl, whisk tahini, lemon juice, olive oil, garlic, and salt.

Add warm water gradually until creamy and pourable.

Step 4: Assemble Wraps

Warm wraps or pita.

Layer with greens, roasted beets, chickpeas, onion, and herbs.

Drizzle generously with tahini lemon sauce.

Roll up and serve!
