Salt & black pepper, to taste

Cheese & Flavor

¾ cup crumbled feta cheese

½ cup shredded mozzarella

2 garlic cloves, minced

1 tbsp olive oil

½ tsp dried oregano

Finish

Fresh basil leaves

Drizzle of balsamic glaze

Instructions

1. Roast the Eggplant

Preheat oven to 400°F (200°C).

Brush eggplant slices with olive oil, season with salt & pepper.

Roast for 15 minutes, flipping once, until golden and tender. Set aside.

2. Prepare the Pastry

On a baking sheet lined with parchment, roll out puff pastry.

Score a 1-inch border around the edges (don’t cut through).

Brush edges with beaten egg for golden color.

Use a fork to prick the center (prevents puffing).

3. Assemble the Tart

Mix garlic, olive oil, and oregano — brush over pastry base.

Arrange roasted eggplant and tomato slices in alternating layers.

Sprinkle with feta and mozzarella.

4. Bake the Tart

Bake at 400°F (200°C) for 20–25 minutes, until pastry is golden and crisp.

Remove and cool slightly.

5. Finish & Serve

Scatter fresh basil leaves on top.

Drizzle lightly with balsamic glaze for extra sweetness.
