500g ground chicken (mince)

Instructions
1. Prepare the Patty Mixture
In a bowl, combine chicken, rosemary, garlic, lemon zest, lemon juice, paprika, breadcrumbs, egg, salt, and pepper.
Mix until well combined (avoid over mixing — it can make patties tough).
2. Form Patties
Divide into 6–8 small patties (about 2½ inches wide).
Chill for 10 minutes in the fridge to firm up (optional but helpful).
3. Cook the Patties
Heat 1 tbsp olive oil in a skillet over medium heat.
Cook patties for 4–5 minutes per side, until golden and cooked through (internal temp: 75°C / 165°F).
Squeeze a little extra lemon juice on top before removing from heat.
4. Prepare the Salad (Optional)
Toss tomatoes, cucumber, and onion with a drizzle of olive oil, lemon juice, salt, and pepper.
5. Assemble & Serve
Spread a generous spoonful of hummus on a plate or bowl.
Place the warm chicken patties on top.
Add the tomato-cucumber salad on the side, sprinkle with herbs, and drizzle with olive oil.
Serve with warm pita or rice if desired.
