Ingredient
For the Chicken Patties:
1 lb (450 g) ground chicken
1 small onion, finely chopped
2 garlic cloves, minced
1 tbsp fresh rosemary, finely chopped (or 1 tsp dried)
Zest of 1 lemon
2 tsp lemon juice
1 egg, lightly beaten
¼ cup breadcrumbs (optional for binding)
Salt and pepper, to taste
2 tbsp olive oil (for frying)
For the Mashed Potatoes:
4 medium potatoes, peeled and chopped
¼ cup milk (or cream for richer flavor)
2 tbsp butter
Salt and pepper, to taste
For Garnish/Herbs:
2 tbsp fresh parsley, chopped
1 tbsp fresh chives, chopped
1 tbsp fresh dill (optional)
Instructions
1. Prepare the Mashed Potatoes:
1. Boil potatoes in salted water for 15–20 minutes until tender.
2. Drain and mash with butter and milk until smooth and creamy.
3. Season with salt and pepper, keep warm.
2. Prepare the Chicken Patties:
1. In a large bowl, combine ground chicken, onion, garlic, rosemary, lemon zest, lemon juice, egg, breadcrumbs (if using), salt, and pepper.
2. Mix gently until all ingredients are combined.
3. Shape the mixture into 8 small patties.
3. Cook the Patties:
1. Heat olive oil in a skillet over medium heat.
2. Cook patties for 4–5 minutes per side, until golden brown and fully cooked through (internal temperature 165°F / 74°C).
4. Assemble the Dish:
Serve chicken patties on a plate with a side of creamy mashed potatoes.
Sprinkle fresh parsley, chives, and dill over the dish for a bright, herbaceous finish.
Optional: drizzle a little extra lemon juice or olive oil over the top.
