Savory Turkey Roulade with Cranberry–Herb Stuffing

A juicy turkey breast rolled with a vibrant stuffing made of cranberries, herbs, caramelized onions, garlic, spinach, and a touch of whole-wheat breadcrumbs.It’s festive, lighter than classic stuffing, and perfect for diet-conscious guests.

🥘 Ingredients 

For the turkey roulade

1 large turkey breast (1–1.2 kg), butterflied

2 tbsp olive oil

1 tsp salt

½ tsp black pepper

1 tsp dried thyme

½ tsp dried rosemary

Kitchen string (for tying)

For the cranberry-herb stuffing

1 tbsp olive oil

1 medium onion, finely chopped

2 garlic cloves, minced

1 cup fresh spinach, chopped

½ cup fresh or frozen cranberries (coarsely chopped)

¼ cup chopped walnuts or pistachios (optional but very Mediterranean)

¼ cup whole-wheat breadcrumbs

1 tsp lemon zest

1 tbsp fresh parsley, chopped

Salt and pepper to taste

Optional glaze (keeps it moist & beautiful)

1 tbsp honey or maple syrup

1 tbsp lemon juice

1 tsp Dijon mustard

🍽 Instructions

1. Prepare the stuffing

Heat 1 tbsp olive oil.

Add onion → sauté 5 minutes.

Add garlic → cook 1 min.

Add spinach → wilt.

Add cranberries + nuts + breadcrumbs + lemon zest + parsley.

Season lightly with salt & pepper.

Cool completely.

2. Prepare the turkey

Lay turkey breast flat.

Cover with plastic wrap and pound gently to an even thickness.

Season with salt, black pepper, thyme & rosemary.

3. Stuff & roll

Spread the stuffing evenly over the turkey.

Roll tightly from the shorter side.

Tie with kitchen string every 2 inches.

4. Sear (optional but adds flavor)

Heat 2 tbsp olive oil in a skillet.

Brown the roulade lightly on all sides for 3–4 minutes.

5. Bake

Place roulade in a baking dish.

Brush with optional glaze (honey + lemon + Dijon).

Bake at 375°F (190°C) for 45–55 minutes, until internal temperature is 165°F (74°C).

6. Rest & slice

Allow the turkey roulade to rest 10 minutes before slicing into spirals.
