Ingredients:
1 medium Hispi (or sweetheart) cabbage, finely shredded
1 large lemon, halved
2 tbsp olive oil (plus extra for grilling lemon)
1 small garlic clove, minced
1 tsp Dijon mustard
1 tbsp apple cider vinegar or white wine vinegar
Salt and black pepper to taste
1 tbsp chopped fresh parsley or dill (optional)
2 tbsp toasted seeds or chopped nuts (pumpkin seeds, almonds, or walnuts for crunch – optional)
Instructions:
1. Char the Lemon:
Heat a dry skillet or grill pan over medium-high heat.
Brush the cut side of the lemon with a little olive oil and place it cut-side down in the pan.
Cook for 3–5 minutes until well charred. Let it cool slightly, then juice it.
2. Make the Dressing:
In a small bowl, whisk together the charred lemon juice, olive oil, garlic, mustard, vinegar, salt, and pepper.
3. Shred the Cabbage:
Remove any tough outer leaves, then finely shred the cabbage using a sharp knife or mandoline.
4. Toss the Salad:
In a large bowl, combine the cabbage with the dressing. Toss thoroughly to coat.
Let it sit for 5–10 minutes to allow the flavors to mingle.
5. Top & Serve:
