  1. – 1 cup uncooked white or brown rice
  2. – 2 cups water or chicken broth
  3. – 1 tablespoon olive oil
  4. – 1 pound large shrimp, peeled and deveined
  5. – 1 teaspoon lemon zest
  6. – 2 cloves garlic, minced
  7. – 1 cup mixed cherry tomatoes, halved
  8. – 1 cup cucumber, sliced
  9. – 1 cup Kalamata olives, pitted
  10. – 1/4 cup crumbled feta cheese (optional)
  11. – 2 tablespoons freshly squeezed lemon juice
  12. – 1 teaspoon dried oregano
  13. – Salt and pepper to taste

Instructions:
