2 medium red onions, thinly sliced
1 tbsp olive oil
1 tbsp balsamic vinegar
1½ tsp honey or maple syrup

1. Roast the Cauliflower
Preheat oven to 200°C (400°F).
Toss cauliflower with olive oil, paprika, cumin, chili flakes, salt, and pepper.
Roast 25–30 minutes, flipping halfway, until golden and crispy.
2. Make Sticky Onions
Heat olive oil in a pan on low–medium heat.
Add onions and salt, cook 12–15 minutes until soft and caramelized.
Stir in balsamic vinegar and honey.
Cook 2–3 minutes until sticky and glossy.
3. Prepare Dressing
Whisk olive oil, lemon juice, Dijon (if using), salt, and pepper.
4. Assemble Salad
In a large bowl, combine:
Lentils
Roasted cauliflower
Sticky onions
Tomatoes & cucumber
Drizzle with dressing and toss gently.
5. Finish
Sprinkle with fresh herbs.
Serve warm or at room temperature.
