Ingredients
For the Spicy Greek Chicken
500g chicken breast, cut into strips
3 tbsp olive oil
1 ½ tbsp lemon juice
1 tbsp Greek yogurt
4 garlic cloves, minced
1 tsp paprika
½–1 tsp chili flakes
1 tsp dried oregano
½ tsp cumin
Salt & black pepper to taste
For the Hot Honey Drizzle
2 tbsp honey
1–2 tsp chili flakes
½ tsp lemon juice
For the Creamy Avocado Tahini Alfredo
1 ripe avocado
2 tbsp tahini
½ cup milk
2 tbsp lemon juice
2 garlic cloves
¼ tsp salt
¼ tsp pepper
2 tbsp parmesan
For the Pasta/Base
250g pasta (orzo, penne, fettuccine, or spaghetti)
Salt for boiling
Optional: spinach or arugula mixed into pasta
Instructions
1. Marinate the Chicken
In a bowl combine:
olive oil
lemon juice
yogurt
garlic
paprika
chili flakes
oregano
cumin
salt + pepper
Add chicken strips, coat well.
Marinate 20–30 minutes.
2. Make the Hot Honey
Warm honey in a small pan for 20 seconds.
Mix in chili flakes + lemon juice.
Set aside (keep warm).
3. Cook the Chicken
Heat a skillet over medium-high.
Add chicken and cook 6–8 minutes until golden and cooked through.
Brush or drizzle a little hot honey over the chicken.
Set aside.
4. Make the Avocado Tahini Alfredo
Blend:
avocado
tahini
lemon juice
garlic
milk or pasta water
salt & pepper
optional parmesan
Blend until silky smooth. Add extra water if needed to thin.
5. Prepare Pasta
Cook pasta according to directions.
Reserve ½ cup pasta water.
Toss hot pasta with the avocado tahini sauce until creamy.
6. Assemble
Add pasta to a bowl.
