1 tbsp olive oil
Notes & Tips:
Use oven-safe skillet: A cast iron or non-stick skillet that can go from stovetop to oven works best.
Make it dairy-free: Swap goat cheese for plant-based cheese or skip it entirely and add more herbs.
Add-ins: Mushrooms, bell peppers, or leeks also work well in this frittata.
Instructions:
1. Preheat oven: to 375°F (190°C).
2. Sauté veggies: In an oven-safe skillet, heat olive oil over medium heat. Add asparagus, peas, zucchini, and green onions. Cook for 3–4 minutes until just tender. Stir in spinach and let it wilt. Season with salt and pepper.
3. Whisk eggs: In a bowl, whisk eggs, milk, herbs, and a pinch of salt and pepper.
4. Combine & cook: Pour egg mixture over the sautéed veggies. Let it cook undisturbed for 2–3 minutes until the edges begin to set.
5. Add cheese & bake: Dot the top with crumbled goat cheese. Transfer skillet to oven and bake for 12–15 minutes, or until set in the center.
6. Cool & serve: Let rest for 5 minutes before slicing. Garnish with extra herbs if ddesire.
