Ingredients:
- 6 cups mixed greens (romaine, spinach, or arugula)
- 2 cups cooked chicken breast, shredded or diced
- 1 cup fresh strawberries, sliced
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 2 hard-boiled eggs, chopped
- 1/4 cup blue cheese crumbles (optional)
- 1/4 cup cooked bacon bits
- 2 tablespoons toasted sunflower seeds (optional, for crunch)
For the Balsamic Vinaigrette:
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper to taste
Directions:
- In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper to make the dressing. Set aside.
