Sweet Potato & Pumpkin Stuffed Chicken with Hot Honey

Ingredients

For the Stuffed Chicken

2 large chicken breasts

1 small sweet potato, cooked and mashed

1/2 cup pumpkin purée

1/4 cup cream cheese or ricotta

1/4 tsp cinnamon

 

1/4 tsp smoked paprika

 

Salt & black pepper to taste

 

For the Hot Honey

 

3 tbsp honey

 

1/2–1 tsp chili flakes (adjust heat level)

 

1/2 tsp lemon juice

 

For Cooking

 

1–2 tbsp olive oil

 

Fresh rosemary (optional)

 

Directions

 

Preheat your oven to 375°F (190°C).

 

Slice a pocket into each chicken breast without cutting all the way through.

 

In a bowl, mix the mashed sweet potato, pumpkin purée, cream cheese, cinnamon, smoked paprika, salt, and pepper.

 

Stuff each chicken breast with the mixture and secure with toothpicks if needed.

 

Heat olive oil in an oven-safe skillet over medium heat.

 

Sear the stuffed chicken for 3–4 minutes per side until golden.

 

Transfer the skillet to the oven and bake for 18–22 minutes, or until the chicken is fully cooked.

 

Meanwhile, warm honey, chili flakes, and lemon juice in a small saucepan—don’t boil, just heat gently.

 

Drizzle the hot honey over the cooked chicken before serving.

 

Garnish with rosemary if desired.
