Ingredients:
Seasoned Black Beans:
- 1 can black beans, drained and rinsed

- 1 tbsp olive oil

- 1/2 tsp cumin

- 1/2 tsp smoked paprika

- 1/2 tsp garlic powder

- Salt & pepper to taste

Cilantro-Lime Rice:
- 1 cup jasmine or basmati rice

- 1 cup water

- 2 tbsp fresh lime juice

- 2 tbsp cilantro, chopped

- Salt to taste

- Bowl Toppings:
- 1 cup corn kernels

- 1 cup shredded lettuce

- 1 avocado, sliced

- 1/4 cup diced red onion

- Cherry tomatoes, halved

- Fresh cilantro and lime wedges for garnish


- Lime Crema:
- 1/4 cup sour cream or Greek yogurt

- 1-2 tsp lime juice

- Salt to taste

Instructions:
- Season the Black Beans: In a skillet, heat olive oil over medium heat. Add black beans, cumin, smoked paprika, garlic powder, salt, and pepper. Sauté for 3-5 minutes until warmed and flavorful.


- Prepare Cilantro-Lime Rice: Cook the rice with water according to package instructions. Once done, stir in lime juice, cilantro, and a pinch of salt for extra flavor.


- Make the Lime Crema: In a small bowl, mix sour cream or Greek yogurt with lime juice and a pinch of salt until smooth. Adjust lime juice to taste.
