Instructions

Preheat oven

Set oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Make filling

In a large bowl, mix shredded chicken, cream cheese, shredded cheese, green onions, jalapeno, garlic powder, onion powder, cumin, paprika, salt, and pepper until well combined.

Assemble taquitos

Warm tortillas slightly (microwave for 20–30 seconds wrapped in a damp towel) to prevent cracking.

Spoon 2–3 tbsp of filling onto the lower third of each tortilla. Roll tightly and place seam side down on the baking sheet.

Bake

Brush or spray taquitos lightly with olive oil.
