Baked Feta with Vegetables & Chickpeas
Baked feta with vegetables and chickpeas is a wholesome, vibrant Mediterranean-inspired dish that’s creamy, savory, and hearty. The salty, creamy feta softens in the oven and pairs perfectly with roasted vegetables and crispy-edged chickpeas. It’s a one-pan wonder—ideal as a meatless main or a flavorful side dish.

Tips & Notes:
Use block feta in brine: for best flavor and texture—it holds up well while baking and turns creamy inside.
Switch up the veggies: with what you have eggplant, mushrooms, or green beans work great too.
Make it spicy: Add a few slices of fresh chili or an extra pinch of chili flakes.
Vegan version: Replace feta with vegan feta or cubes of firm tofu seasoned with lemon and salt.
