⏱ Time
Prep: 15 minutes
Cook: 20–25 minutes
Total: ~35–40 minutes
⭐ Ingredients
For the Filling
1 cup spinach, chopped (fresh or thawed frozen, moisture squeezed out)
1 cup broccoli, very finely chopped (lightly steamed or microwaved 2 minutes)
½ cup feta cheese, crumbled
¼ cup mozzarella, shredded (for meltiness)
1 clove garlic, minced
1–2 tbsp olive oil
Salt & pepper to taste
Optional: pinch of oregano or dried basil
For the Puff Pastry
2 sheets puff pastry, thawed
1 egg (for egg wash)
Optional garnish: sesame seeds, nigella seeds, chili flakes, fresh parsley
🍃 Instructions
1. Make the Filling
1. Heat olive oil in a pan.
2. Add minced garlic and sauté 30 seconds.
3. Add chopped spinach and broccoli. Cook 2–3 minutes to soften.
4. Remove from heat and let cool slightly.
5. Mix in feta, mozzarella, salt & pepper. (Don’t oversalt — feta is salty.)
2. Shape the Christmas Tree
1. Place one puff pastry sheet on a baking tray.
2. Spread the spinach–broccoli–feta filling evenly, leaving a 1–2 cm border.
3. Place the second puff pastry sheet on top and gently press edges to seal.
4. Cut out the tree shape:
Start by cutting a big triangle (tree shape).
Cut small horizontal strips on each side (these will become the branches).
5. Twist the branches:
Grab each strip and twist 2–3 times.
The more twists, the prettier the tree!
3. Bake
Brush the entire pastry with egg wash.
Sprinkle sesame or nigella seeds on top (optional).
Bake at 200°C (390°F) for 20–25 minutes until golden, puffy, and crisp.
4. Serve
Let cool for 5 minutes.
Lift carefully onto a serving plate.
Garnish with parsley, or drizzle with a little olive oil.
Perfect warm or at room temperature!
🌟 Tips
Add 1–2 tbsp cream cheese for extra creaminess.
Swap mozzarella with ricotta for a softer filling.
Add sun-dried tomatoes or olives for Mediterranean flavor.
Make ahead: Assemble the tree, refrigerate, then bake right before serving.
