Garlic Chicken Fried Rice
A flavorful twist on a classic dish! Tender chicken, fragrant garlic, and fluffy rice, stir-fried to perfection!
Ingredients:
* 2 cups cooked white rice, chilled
* 2 chicken breasts, diced
* 2 cloves garlic, minced
* 1 cup mixed vegetables (such as peas, carrots, and corn)
* 2 eggs, beaten
* 2 tablespoons soy sauce
* 1 tablespoon olive oil
* Salt and pepper to taste
* Green onions for garnish (optional)
Instructions:
1. Heat oil in a large skillet or wok over medium-high heat.
2. Add diced chicken and minced garlic, cooking until the chicken is fully cooked and the garlic is fragrant.
3. Push the chicken to one side of the skillet and pour beaten eggs onto the other side.
4. Scramble the eggs until they are fully cooked.
5. Add mixed vegetables and cook them until tender.
6. Stir in chilled rice, breaking up any clumps, and combine everything by stir-frying.
7. Drizzle soy sauce and olive oil over the rice, stirring until evenly coated.
8. Season with salt and pepper to your liking.
9. Optionally, garnish with chopped green onions.
10. Serve the dish hot.
