Ingredients

1 tsp smoked paprika

1 tsp dried oregano

½ tsp coriander

Grilled Vegetables:

1 zucchini, sliced into thick rounds

1 red bell pepper, cut into squares

1 yellow bell pepper, cut into squares

1 small red onion, cut into wedges

2 tbsp olive oil

4–6 warm pita breads or flatbreads

1 cup hummus

1 cup tzatziki (Greek yogurt + cucumber + garlic + lemon + dill)

1 cup tabbouleh or Mediterranean salad

½ cup kalamata olives

½ cup feta cheese, crumbled

Fresh herbs: parsley or mint for garnish

Lemon wedges for serving

Instructions

Marinate chicken

In a large bowl, whisk olive oil, garlic, lemon juice, zest, cumin, paprika, oregano, coriander, salt, and pepper.

Add chicken cubes, toss well, cover, and marinate at least 1 hour (up to 8 hours).

Prepare vegetables

Toss zucchini, peppers, and onion with olive oil, salt, and pepper.

Assemble skewers
