Honey Garlic Orzo with Roasted Tomatoes

Ingredients

Roasted Tomatoes

1 cup cherry tomatoes, whole or halved

1 tbsp olive oil

1 clove garlic, minced

Salt & black pepper

Optional: pinch oregano or Italian seasoning

Honey Garlic Orzo

1 cup orzo pasta

1 tbsp olive oil

2–3 cloves garlic, minced

1 tbsp honey

1½ cups vegetable or chicken broth

Salt & pepper to taste

Optional: 1 tbsp lemon juice

Optional: 2 tbsp parmesan or feta to serve

Fresh Garnish

  • Fresh basil or parsley
  • Chili flakes
Instructions

1. Roast the Tomatoes

Preheat oven to 200°C (400°F).

Toss cherry tomatoes with olive oil, garlic, salt, pepper, and oregano.

Spread on a tray and roast 12–15 minutes, until soft and lightly caramelized.

2. Cook the Orzo

In a pan, melt butter over medium heat.

Add minced garlic and saute 30 seconds until fragrant.

Stir in orzo and toast for 1–2 minutes (helps it stay firm).

Pour in broth, add salt + pepper, and simmer 8–10 minutes, stirring until orzo is tender.

When almost done, stir in honey and optional lemon juice.

Cook 1 more minute until glossy and creamy.

3. Combine

Add roasted tomatoes (and any tray juices) into the orzo.

Gently fold together.

4. Serve

Top with:

Fresh basil or parsley

Parmesan or crumbled feta

Extra drizzle of honey

Tips

Add grilled chicken or shrimp for protein.

Add spinach or arugula for greens.

Use half honey + half hot honey for a sweet-spicy version.
