 Ingredients 

Pasta

300 g penne pasta

Water & salt (for boiling)

Sauce & Vegetables

2 tbsp extra-virgin olive oil

3 cloves garlic, minced

1 small onion, finely chopped (optional)

1½ cups asparagus, trimmed and cut into 2–3 cm pieces

1½ cups crushed tomatoes or tomato passata

½ tsp dried oregano

½ tsp dried basil

Salt & black pepper, to taste

Finish (Optional)

¼ cup grated Parmesan cheese

Fresh basil or parsley, chopped

Extra drizzle of olive oil

 Instructions

1️⃣ Cook the pasta

Bring a large pot of salted water to a boil.

Cook penne according to package instructions until al dente.

Reserve ½ cup pasta water, then drain.

2️⃣ Cook the asparagus

Heat 1 tbsp olive oil in a large pan over medium heat.

Add asparagus and sauté for 3–4 minutes until tender-crisp.

Remove from pan and set aside.

3️⃣ Make the tomato sauce

In the same pan, add remaining olive oil.

Sauté onion (if using) for 2–3 minutes until soft.

Add garlic and cook 30 seconds until fragrant.

Stir in crushed tomatoes, oregano, basil, salt, and pepper.

Simmer gently for 8–10 minutes.

4️⃣ Combine everything

Add cooked pasta and asparagus to the sauce.

Toss well, adding a splash of reserved pasta water if needed.

5️⃣ Serve

Finish with Parmesan, fresh herbs, and a drizzle of olive oil.

Serve warm.
