Ingredients

For the Chicken Patties

500 g (1 lb) ground chicken

1 ½ tbsp olive oil

2 tsp fresh rosemary, finely chopped

1 tsp lemon zest

1 tbsp lemon juice

2 tbsp breadcrumbs or oat flour

1 small garlic clove, minced

2 tbsp fresh parsley, chopped

½ tsp salt

¼ tsp black pepper

For the Mushroom Farro

1 cup cooked farro (about ⅓ cup uncooked)

1 tbsp olive oil

1 cup mushrooms, sliced (cremini or button)

1 small shallot or onion, finely chopped

1 garlic clove, minced

2 tbsp vegetable or chicken broth (optional, for flavor)

Salt and pepper, to taste

Fresh parsley for garnish

For the Mashed Potatoes

2 medium potatoes, peeled and cubed

1 tbsp butter (or olive oil for lighter option)

2 tbsp milk (or Greek yogurt for extra creaminess)

Salt and pepper, to taste

‍ Instructions

1. Make the Chicken Patties

1. In a bowl, combine ground chicken, rosemary, lemon zest, lemon juice, breadcrumbs, garlic, parsley, salt, and pepper.

2. Mix gently until just combined — don’t overmix.

3. Shape into 6–8 small patties.

4. Heat olive oil in a skillet over medium heat.

5. Cook patties for 4–5 minutes per side, until golden brown and cooked through (internal temp 74°C / 165°F).

6. Remove and set aside, cover lightly to keep warm.

2. Cook the Mushroom Farro

1. In the same pan, add olive oil and sauté shallots for 1–2 minutes.

2. Add mushrooms and cook until golden, about 5–7 minutes.

3. Add garlic and cook for another 30 seconds.

4. Stir in cooked farro and a splash of broth to deglaze the pan.

5. Season with salt, pepper, and parsley.

3. Make the Mashed Potatoes

1. Boil potatoes in salted water for 10–12 minutes until fork-tender.

2. Drain and mash with butter, milk, salt, and pepper until smooth and creamy.

3. Adjust consistency with a splash more milk if needed.

4. Assemble and Serve

Spoon mashed potatoes onto each plate.

Add a serving of mushroom farro beside it.

Top with 2–3 chicken patties.

Garnish with fresh rosemary and a squeeze of lemon juice.

Notes & Tips

For extra flavor, mix a lemon yogurt sauce (Greek yogurt + lemon juice + olive oil + salt) to drizzle on top.

Substitute farro with brown rice or barley if preferred.

Use turkey or ground salmon instead of chicken for variation.
