Mediterranean Zucchini Chicken & Fresh Corn Burger
Moist shredded zucchini, sweet fresh corn, tender ground chicken, herbs, lemon, and a touch of feta create a juicy Mediterranean-style burger patty — served on buns, pita, or lettuce wraps.

⭐ Ingredients
For the Chicken Patties
450 g ground chicken (or turkey)
1 small zucchini, grated & water squeezed out
½ cup fresh corn kernels
¼ cup crumbled feta
2 tbsp chopped parsley or basil
1 small garlic clove, minced
½ tsp oregano
½ tsp paprika (optional; non-spicy but adds colour)
Zest of ½ lemon
½ tsp salt
¼ tsp black pepper
1 egg
¼ cup breadcrumbs (adjust if mixture feels too wet)
Toppings
Lettuce
Tomato slices
Cucumber slices
Red onion (optional)
Feta crumbles
Sauce (Mediterranean Yogurt Sauce)
½ cup Greek yogurt
1 tbsp lemon juice
1 tsp olive oil
½ tsp dill or parsley
Pinch salt & pepper
🍽 Instructions
1. Make the Mixture
1. Grate zucchini, squeeze out all excess water using hands or paper towel.
2. In a bowl mix:
- ground chicken
- zucchini
- corn
- feta
- herbs
- garlic
- oregano
- paprika
- lemon zest
- salt & pepper
- egg
- breadcrumbs
3. Stir until combined. If too soft → add 1–2 tbsp more breadcrumbs.
2. Shape the Patties
Form 4 medium patties with slightly damp hands.
Keep thickness even so they cook well.
3. Cook the Burgers
You can pan fry, grill, or air fry:
Pan Fry
Heat a little olive oil in a pan.
Cook patties 4–5 min per side until golden and fully cooked.
Grill
Brush patties with olive oil.
Grill 4–5 minutes each side.
Air Fryer
180°C (360°F) for 10–12 minutes, flipping halfway.
Make sure internal temp reaches 75°C / 165°F.
4. Make the Yogurt Sauce
Mix all yogurt sauce ingredients until creamy.
5. Assemble the Burger
Layer on a bun, pita, or lettuce wrap:
- lettuce
- tomato
- chicken–zucchini–corn patty
- yogurt sauce
- extra feta
- cucumbers or onions
🌿 Optional Mediterranean Add-ons
Add sun-dried tomatoes to the patty
Add spinach or shredded carrot
Add mint for bright flavour
Serve with sweet potato fries, salad, or roasted veggies
