4 chicken thighs or breasts (bone-in thighs recommended)

500 g mini potatoes, halved

1 medium onion, sliced

5–6 garlic cloves, smashed

1 large lemon (half sliced, half juiced)

3 tbsp olive oil

1 tbsp Greek yogurt (optional for tenderness)

1 tsp dried oregano

1 tsp dried thyme

½ tsp dried rosemary

½ tsp black pepper

1. Make the Marinade
