Shrimp and Sausage Veggie Skillet
Ingredients:
For the Shrimp and Sausage:
- 1 lb shrimp, peeled and deveined
- 1 Tbsp olive oil
- 3 tsp minced garlic
- 1 tsp onion powder
- 1 tsp paprika
- Salt and pepper to taste
- Red pepper flakes to taste (optional, for heat)
- ½ lb smoked sausage, sliced
For the Veggies:
- 1 Tbsp olive oil
- 1 ¼ cups red bell pepper, diced
- 1 cup asparagus, cut into pieces
- 2 cups zucchini, diced
- 2 Tbsp chicken broth
- Salt and pepper to taste
Instructions:
- Prepare the Shrimp and Sausage:
In a large bowl, toss the shrimp with olive oil, minced garlic, onion powder, paprika, salt, pepper, and red pepper flakes (if using). - Heat a large skillet over medium-high heat. Add the sliced smoked sausage and cook until browned and heated through, about 4-5 minutes. Remove from the skillet and set aside.
- In the same skillet, add the seasoned shrimp. Cook for 2-3 minutes per side, or until pink and opaque. Remove from the skillet and set aside with the sausage.
- Cook the Veggies:
In the same skillet, add 1 tablespoon of olive oil.
Add the diced red bell pepper, asparagus pieces, and zucchini. Cook, stirring occasionally, until the vegetables are tender, about 5-7 minutes. - Add the chicken broth and cook for an additional 1-2 minutes, until the broth has mostly evaporated and the veggies are coated.
- Combine and Serve:
- Return the cooked shrimp and sausage to the skillet with the veggies. Stir to combine and heat through.
- Season with additional salt and pepper to taste.
Serve: - Serve hot, either on its own or over rice or noodles if desired.
