Ingredients

For the shrimp:

1 lb (450 g) large shrimp, peeled & deveined

1 tbsp olive oil

1 clove garlic, minced

½ tsp smoked paprika

½ tsp chili flakes

Salt & black pepper, to taste

For the mango chili sauce:

1 ripe mango, peeled & diced

2 tbsp sweet chili sauce

1 tbsp lime juice

1 tsp rice vinegar

1 tbsp olive oil

Pinch of salt

For the orzo & bowl:

1 ½ cups uncooked orzo pasta

1 cup cucumber, diced

1 cup cherry tomatoes, halved

½ red onion, thinly sliced

½ avocado, diced

2 tbsp fresh cilantro or parsley, chopped

Lime wedges, for serving

Instructions

Cook orzo

Bring a pot of salted water to a boil. Cook orzo until al dente (8–10 minutes). Drain and toss with a drizzle of olive oil.

Make mango chili sauce

In a blender, combine mango, sweet chili sauce, lime juice, vinegar, olive oil, and salt. Blend until smooth. Taste and adjust sweetness/spice.

Cook shrimp

Pat shrimp dry and season with paprika, chili flakes, garlic, salt, and pepper.

Heat 1 tbsp olive oil in a skillet over medium-high heat.

Sear shrimp 2–3 minutes per side until pink and slightly caramelized.

Assemble bowls

Divide orzo into bowls.

Top with cucumbers, cherry tomatoes, onion, avocado (if using), and shrimp.
