This creamy, garlicky Tuscan shrimp dish is packed with flavor and Mediterranean-inspired ingredients. Ingredients:
1 lb (450 g) large shrimp, peeled and deveined
2 tbsp extra virgin olive oil
4–5 cloves garlic, minced
1 cup cherry tomatoes, halved (or ½ cup sun-dried tomatoes, chopped)
1 cup fresh spinach, packed
1 cup heavy cream (or coconut cream for a lighter option)
½ cup grated Parmesan cheese
½ tsp dried oregano
½ tsp dried thyme
¼ tsp red pepper flakes (optional)

Instructions:
Prepare the shrimp: Pat the shrimp dry with paper towels and season with salt and pepper.
Saute the shrimp: Heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2–3 minutes per side, until pink and slightly browned. Remove and set aside.
Cook the garlic and tomatoes: In the same skillet, lower the heat to medium and add the garlic. Sauté for 1 minute until fragrant. Add the cherry tomatoes or sun-dried tomatoes and cook until softened (about 2–3 minutes).
Make the sauce: Pour in the heavy cream, stirring to combine. Add the Parmesan, oregano, thyme, and red pepper flakes (if using). Let the sauce simmer for 3–4 minutes until slightly thickened.
Add spinach and shrimp: Stir in the spinach and cook until wilted, about 1–2 minutes. Return the shrimp to the skillet and toss to coat in the sauce. Cook for another 1–2 minutes until heated through.
Finish and serve: Taste and adjust seasoning with salt and pepper. Garnish with fresh basil and serve immediately.
