½ cup roasted cauliflower (from above batch)

3 tbsp tahini

2 tbsp olive oil

2 tbsp lemon juice, freshly squeezed

1 clove garlic, minced

½ tsp ground cumin

3–4 tbsp ice water (adjust for creaminess)

Salt to taste

Topping & Garnish:

Remaining roasted cauliflower (crispy pieces)

2 tbsp pine nuts or toasted almonds

1 tbsp fresh parsley, chopped

Extra drizzle of olive oil

Sprinkle of paprika or za’atar (optional)

1. Roast the cauliflower

Preheat oven to 425°F (220°C).

Toss cauliflower florets with olive oil, paprika, cumin, salt, and pepper.

Spread on a baking sheet and roast 25–30 minutes, until golden and crispy at the edges.

2. Make hummus base

In a food processor, combine chickpeas, ½ cup roasted cauliflower, tahini, olive oil, lemon juice, garlic, cumin, and salt.

Blend until smooth, adding ice water a tablespoon at a time until creamy.

3. Assemble

Spread hummus in a shallow bowl.

Top with crispy roasted cauliflower, toasted nuts, parsley, and a drizzle of olive oil.

Sprinkle with paprika or zaatar if desired.
