Grilled Fish with Roasted Sweet Potatoes 

This meal combines the rich flavors of grilled fish with the sweetness of roasted sweet potatoes and the freshness of green beans, providing a nutritious and balanced option that aligns perfectly with the Mediterranean diet.

 INGREDIENTS:

For the Grilled Fish:

2 fish fillets (salmon, tilapia, or your preferred fish)

2 tbsp olive oil

Juice of 1 lemon

2 garlic cloves, minced

1 tsp dried oregano

Salt and pepper to taste

Fresh parsley for garnish (optional)

For the Roasted Sweet Potatoes:

2 medium sweet potatoes, peeled and cubed

2 tbsp olive oil

1 tsp paprika

1 tsp garlic powder

Salt and pepper to taste

For the Green Beans:

1 lb fresh green beans, trimmed

1 tbsp olive oil

2 garlic cloves, minced

Salt and pepper to taste

Juice of 1/2 lemon

 INSTRUCTIONS:

1. Prepare and Roast the Sweet Potatoes:

1. Preheat your oven to 425°F (220°C).

2. In a large bowl, toss the sweet potato cubes with olive oil, paprika, garlic powder, salt, and pepper.

3. Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.

4. Roast in the preheated oven for 25-30 minutes, or until tender and golden brown, stirring halfway through.

2. Prepare the Green Beans:

1. While the sweet potatoes are roasting, bring a pot of salted water to a boil.

2. Add the green beans and blanch for 2-3 minutes, until they are bright green but still crisp.

3. Drain and immediately transfer the green beans to a bowl of ice water to stop the cooking process. Drain again and set aside.

4. Heat the olive oil in a large skillet over medium heat.

5. Add the minced garlic and sauté for about 1 minute, until fragrant.

6. Add the green beans to the skillet, season with salt and pepper, and sauté for 3-4 minutes, until tender-crisp.

7. Squeeze lemon juice over the green beans before serving.

3. Grill the Fish:

1. While the sweet potatoes are roasting and the green beans are being prepared, preheat your grill or grill pan to medium-high heat.

2. In a small bowl, mix the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.

3. Brush the fish fillets with the olive oil mixture on both sides.

4. Place the fish fillets on the grill and cook for about 4-5 minutes per side, or until the fish flakes easily with a fork.

5. Remove from the grill and garnish with fresh parsley, if using.
