Total Time: 20 minutes
Ingredients
For the filling:
1 tbsp olive oil
2 cups mushrooms, sliced (cremini, button, or baby bella)
2 cups fresh spinach, roughly chopped
2 cloves garlic, minced
Salt and black pepper, to taste
1/4 tsp chili flakes (optional)
For the toast:
4 slices whole grain or sourdough bread
1 cup shredded mozzarella or cheddar cheese (or a mix)
2 tbsp cream cheese or ricotta (optional for extra creaminess)
Butter for toasting (optional)
Instructions
1. Sauté the Mushrooms & Spinach:
Heat olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds.
Add sliced mushrooms and cook for 5–6 minutes until browned and tender.
Stir in spinach and cook until wilted (about 1–2 minutes). Season with salt, pepper, and chili flakes. Set aside.
2. Assemble the Toast:
If using, spread cream cheese on one side of each slice of bread.
Divide the mushroom-spinach mixture between two slices.
Top with shredded cheese and close with another bread slice, pressing gently.
3. Grill the Toast:
Heat a clean skillet or pan over medium heat.
Spread a thin layer of butter on the outsides of the sandwich (optional but tasty).
Toast for 2–3 minutes per side, pressing gently with a spatula, until bread is golden and cheese is melted.
4. Serve:
Slice in half and serve warm with a side salad, soup, or dipping sauce.
Notes
Add protein: Add sautéed tofu, shredded rotisserie chicken, or a fried egg inside.
Make it spicy: Add jalapeños or a smear of hot sauce inside the toast.
Vegan version: Use vegan butter, dairy-free cheese, and plant-based cream cheese.
No cream cheese? Sub with hummus or skip it altogether.
❓ Questions & Answers

Q: What kind of mushrooms are best?
A: Cremini or baby bella mushrooms work great, but white button mushrooms also do well.

A: Make sure to cook off the moisture from mushrooms and spinach before assembling the sandwich.
