Ingredients:
* 1.25 pounds boneless skinless chicken breasts, diced into bite-sized pieces
* 3 cups broccoli florets
* 3 cups cauliflower florets
* 2 large carrots, sliced into 1/4-inch rounds on the bias
* 2 to 3 tablespoons olive oil
* ½ teaspoon freshly ground black pepper, or to taste
* 10 ounces sweet chili sauce, or as desired; divided

Instructions:
1. Begin by washing and cutting the broccoli, cauliflower, and carrots.
2. Dice the chicken breasts into bite-sized pieces.
3. In a large skillet or wok, heat 2 to 3 tablespoons of olive oil over medium-high heat.
4. Add the diced chicken and season with ½ teaspoon of black pepper.
5. Cook the chicken for about 5-7 minutes, stirring occasionally, until it is cooked through and no longer pink in the center.
6. Add the broccoli florets, cauliflower florets, and sliced carrots to the skillet.
7. Stir to combine and cook for an additional 5-7 minutes, or until the vegetables are tender but still crisp.
8. Pour about 8 ounces of the sweet chili sauce over the chicken and vegetables, stirring well to coat everything evenly.
9. Cook for another 2-3 minutes, allowing the sauce to heat through.
10. Taste and adjust seasoning if necessary, adding more black pepper or sweet chili sauce as desired.
