Easy Niçoise Salad

The Simplest Recipe for Niçoise Salad
A traditional Mediterranean cuisine is salade Niçoise, or niçoise salad in French. It originated in Nice, which is located on the French Riviera, and it is ideal for bright, sunny days. This dinner is by its very nature simple, making it ideal for days when standing next to a stove is the last thing you want to do. With a few shortcuts, we’ve made an already simple dish even simpler.
Ingredients:
- two cups of mixed greens
- Six ounces of green beans
- Three eggs, soft-boiled
- One bundle The Little Potato Company Microwave-Ready Herb & Lemon Kit
- Six ounces of oil-packed tinfish, such as salmon, tuna, or smoked trout
- One cup of mixed olives
- ½ cup cherry tomatoes
- Two little Persian cucumbers, thinly sliced
- 2 tablespoons finely chopped fresh basil with a lemon dressing
- Five tablespoons of lemon juice
- Six tablespoons of olive oil
- One teaspoon Dijon mustard
- One tablespoon honey
- half a teaspoon salt
- two tablespoons fresh chives
Directions:
- Bring a small pot of water to a rapid boil. Add green beans and blanch for 2 minutes. Drain and allow to cool completely.
- Heat potatoes according to package instructions along with herbs.
- In a small bowl mix together all ingredients for lemon dressing.
- On a large platter arrange mixed greens. Top with potatoes, olives, tomatoes, cucumbers, eggs, green beans and fish. Drizzle with dressing and top with fresh basil. Enjoy.
Notes:
This dish can easily be made vegetarian. Don’t like fish? Add chickpeas, white beans or feta in their place. If you’re looking for meat, but fish isn’t your thing a thinly sliced steak also makes a great substitute. We encourage you to make this dish your own! Swap out any of the vegetables with whatever you have growing in your garden. Here are a few suggestions:
