Honey Pineapple Glazed Chicken
Ingredients:
- 4 chicken breasts (you can use thighs if you prefer)
- 1 can of pineapple slices in juice (approximately 435 g)
- 1/4 cup honey
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar (or white vinegar)
- 2 garlic cloves, minced
- 1 teaspoon fresh ginger, grated
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley, chopped, for garnish (optional)
Instructions:
- Prepare the Chicken:
Season the chicken breasts with salt and pepper on both sides. - Sear the Chicken:
In a large skillet, heat the olive oil over medium-high heat.
Add the chicken breasts and sear them on both sides until golden brown, about 3-4 minutes per side.
Remove the chicken from the skillet and set aside. - Make the Glaze:
In the same skillet, reduce the heat to medium and add the minced garlic and grated ginger. - Cook for 1 minute until fragrant.
Then, add the honey, soy sauce, rice vinegar, and the juice from the can of pineapple (reserve the slices for later).
Stir well and simmer until the sauce thickens slightly, about 3-5 minutes. - Cook the Chicken in the Glaze:
Return the chicken to the skillet and coat it with the glaze.
Simmer over low heat for 10-15 minutes, or until the chicken is fully cooked and the glaze is well-coated on the chicken. - Add the Pineapple:
During the last 5 minutes of cooking, add the pineapple slices to the skillet, placing them on top of the chicken breasts.
Allow them to heat through and absorb the flavors of the glaze. - Serve:
Serve the honey pineapple glazed chicken hot.
Garnish with chopped fresh parsley if desired.
