Delicious Sauteed Vegetables
These sauteed vegetables are perfect as a healthy side dish, packed with flavor and vibrant colors!
Ingredients:
* 4 tbsp olive oil
* ½ large red onion, cut into 1-inch pieces (layers separated)
* 2 medium carrots, thinly sliced
* 1 large red bell pepper, cut into strips
* 1 cup broccoli, cut into medium florets
* 1 cup cauliflower, cut into medium florets
* 1 cup cremini mushrooms, sliced
* 1 medium zucchini, sliced ¼ inch thick
* 2 cloves garlic, minced
* ½ tsp sea salt (to taste)
* ¼ tsp black pepper (to taste)
* Fresh parsley (optional, for garnish)
Instructions:
1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
2. Add the red onion and sliced carrots to the skillet.
3. Sauté for about 3-4 minutes until they start to soften.
4. Stir in the broccoli and cauliflower florets.
5. Cook for another 4-5 minutes, stirring occasionally.
6. Next, add the red bell pepper strips and zucchini slices.
7. Cook for 3-4 more minutes, stirring frequently.
8. Add the sliced cremini mushrooms and sauté for 2-3 minutes until they soften and release moisture.
9. Stir in the minced garlic and olive oil.
10. Cook for about 1-2 minutes until the garlic is fragrant.
11. Season the vegetables with sea salt and black pepper to taste.
12. Continue sautéing for another 1-2 minutes until the vegetables are cooked to your desired tenderness.
13. Remove from heat, garnish with fresh parsley if desired, and serve immediately.
