Healthy Zucchini Patties with Cucumber Sauce

Vegetable Cutlets:
Ingredients:
3 Zucchinis
Salt (to taste)
1 Onion
Olive Oil
1 Carrot
Green Onion
Red Pepper
Black Pepper (to taste)
Oregano
1 Clove of Garlic
1 cup of Corn
1 Egg
1/2 cup Flour (Chickpea or almond)
Instructions:
1. Grate 3 zucchinis and sprinkle with salt. Let them sit for a few minutes, then squeeze out excess water.
2. In a pan, saute chopped onion in olive oil until translucent.
3. Add grated zucchini, grated carrot, chopped green onion, diced red pepper, minced garlic, and corn to the pan. Season with black pepper and oregano. Cook for 3-5 minutes.
4. In a bowl, mix the cooked vegetables with an egg and flour until well combined.
5. Grease a pan with olive oil. Spoon portions of the mixture onto the pan and flatten to form pancakes.

2 Garlic Cloves
2 Pickled Cucumbers

Instructions:
1. In a blender, combine fat-free yogurt, garlic, pickled cucumbers, and dill. Blend until smooth.
2. Adjust seasoning to taste.
