Mediterranean Kung Pao Chicken Recipe

Ingredients:
– 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
– 2 cloves garlic, minced
– 1 cup mixed bell peppers (green, red, yellow)
– 1/2 cup sliced Kalamata olives
– 1/4 cup chopped fresh parsley
– 2 tablespoons olive oil
– 2 tablespoons lemon juice
– 1 tablespoon soy sauce
– 1 teaspoon paprika
– Salt and pepper to taste
– 1/4 cup crumbled feta cheese
Instructions:
1. Heat olive oil in a large skillet or wok over medium-high heat.
2. Add chicken to the skillet and cook until browned and cooked through (5-7 minutes). Remove from skillet and set aside.
3. Add garlic to the skillet and cook for 1 minute, until fragrant.
4. Add bell peppers to the skillet and cook until tender (3-4 minutes).
5. Add olives, parsley, lemon juice, soy sauce, and paprika to the skillet. Stir to combine.
6. Return chicken to the skillet and stir to coat with sauce.
7. Cook for an additional 2-3 minutes, until sauce has thickened.
8. Season with salt and pepper to taste.
9. Transfer to a serving platter and top with crumbled feta cheese.
